Separate the egg whites from the yolks.
In a bowl, mix the flour, egg yolks, baking powder, salt, and pepper with a whisk. Gradually pour in the milk.
Beat the egg whites with a pinch of salt until firm and gently fold them into the mixture.
Cut the ham slices in half.
Pour a small ladle of the batter in a hot oiled griddle (or a non-stick pan).
Put the ham and Entremont Trio Gourmand cheese on top.
Cook for 3 minutes over a medium heat, pour a little pancake batter over the ham and cheese, then flip over (when the batter bubbles) and continue cooking for 2 minutes.
